Sardinhas a Portuguesa
(portuguese sardines)
1 kg sardines
250 ml refined oil, salad oil or olive oil
250 ml tomato ketchup
10 flakes garlic, crushed
Method:
Clean sardines removing heads, fins and entrails, wash well and apply salt. Heat the oil in a pressure cooker. Add the garlic paste, ketchup and 2 cups of water. Arrange the fish on the oil, etc. and close the cooker. Allow to cook for an hour and a quarter.
The above dish can also be prepared by using vinegar (3 tablespoons) and fresh tomato puree instead of tomato ketchup. In this case a paste of 6 cloves of garlic should be added to the heated oil, besides water.
