Yoghurt Salad
(Raita)
Ingredients:
250 gms cucumbers thinly sliced
Salt to taste
200 gms yoghurt
2 spring onions thinly sliced
3 green chillies seeded and finely cut
Coriander leaves to garnish
Method:
Place the cucumber slices in a colander and sprinkle with salt. Leave to drain for 30 minutes. Dry thoroughly. Mix with yoghurt, spring onions and chillies. Arrange in a serving dish and chill. Garnish with coriander leaves.
