Sambhar
(choice spices roasted and powdered)
Ingredients:
¼ kg coriander seeds
Dry red chillies twice the volume of coriander seeds
4 tsp peppercorns
4-5 turmeric powder
A little oil
Method:
Roast the chillies in the oil. Roast the coriander seeds separately in a spoonful of oil till browned on a slow fire. Remove and keep aside. In the same oil used for roasting the coriander seeds, add the chillies and roast the chillies once again till done, ensuring that they do not turn black. Roast the peppercorns and turmeric separately and mix all the spices together. Cool and pound to a powder. Sieve and store in bottles.
