Mousse au Chocolate
Ingredients:
60 gms unsalted butter at room temperature
60 gms good quality plain chocolate
2 eggs, size 3, separated
15 gms castor sugar

Method:
Cream the butter until light and fluffy. Break up the chocolate and melt with 2 tbsp water in a bowl set over a pan of hot water. Remove from heat, leave until cool, stirring frequently. Beating the chocolate steadily, add the egg yolks one at a time, then the sugar. Stir in the butter. When thoroughly blended, gently fold in the stiffy whisked egg whites using a metal spoon. Pour in a wet mould and keep in the fridge to set.
