Chocolate Souffle
Ingredients:
500 ml milk
3 eggs
150 gms sugar
3 tbsp cocoa
20 gms food grade gelatine
100 ml water
1 tsp instant coffee
8 walnuts

Method:
Mix milk with cocoa and coffee, warm for some time and pour over the egg yolks mixed with sugar. Keep it on the fire and cook, stirring all the time until it thickens. Do not over cook. Remove from the fire and add food grade gelatine mixed in 100 ml of water. When cold, add stiff beaten egg whites, walnut pieces and mix well. Pour in a wet mould and keep in the fridge to set.
